Easy Corn Fritters
Makes 10-12
Ingredients
- 1 egg
- ½ cup EasiYo Greek Style Unsweetened Yogurt
- 1 tsp curry powder
- 1 Tbsp lemon juice
- 2 spring onions, finely chopped
- ¼ cup chopped fresh coriander
- 2 cups whole kernel corn, well drained
- ¾ cup self-raising flour, sifted
- salt and freshly ground pepper
- vegetable oil for frying
Method
- In a bowl beat together the egg, yogurt, curry powder and lemon juice. Add the spring onion, coriander, corn kernels, seasonings and the flour. Stir to combine.
- Heat a little oil in a heavy-bottomed frying pan over medium heat. Drop spoonfuls of the batter into the pan, taking care to leave enough room between the fritters to turn easily. Cook until golden-brown on each side.
- Transfer the cooked fritters onto a plate covered with paper towels and drain. Keep warm until ready to serve.
- Serve with EasiYo Greek Style Yogurt and sweet chilli sauce or chutney.
