Stuffed Mushrooms

Ingredients

  • 100g crumbled feta cheese
  • 1 small onion, peeled and finely chopped
  • 2 cloves garlic, peeled and finely chopped
  • 1/2 c chopped ham
  • 1/4 c chopped parsley
  • 1 c wholemeal breadcrumbs
  • 1/2 c EasiYo Natural Yogurt
  • salt and freshly ground pepper
  • 12 Portabello mushrooms
  • Olive Oil for drizzling

           

Directions

  • In a bowl combine the first eight ingredients and mix well.
  • Clean the mushrooms by wiping them with absorbent paper towels, then place skin-down on a baking tray.
  • Spoon a little of the mixture onto each mushroom and spread so it forms an even layer
  • Drizzle a little oil over each.
  • Place under a hot grill for about 10 minutes or until the mushrooms soften and the topping turns golden and is starting to bubble.
  • Serve immediately
