Caramelised Onion Dip
Ingredients
- 1 Tbsp butter
- 1 Tbsp olive oil
- 1 large onion, diced
- ⅛ tsp cayenne pepper
- ¼ tsp onion powder
- ¼ tsp salt
- 1 cup EasiYo Greek Style Unsweetened yogurt
- 4 Tbsp mayonnaise
- Chopped chives to garnish
Method
- Heat a large pan on medium heat and gently fry onions in butter and oil for 1-2 minutes. Add spices and salt, reduce heat and cook for a further 15-20 minutes, stirring occasionally.
- Remove from the heat and allow to cool.
- In a bowl combine onion mixture, yogurt and mayonnaise and mix well. Taste and adjust seasoning with salt and pepper. Refrigerate for 2 hours.
- Sprinkle with chives and serve with EasiYo’s Rosemary and Sea Salt Crackers.
