Cheerio & Cranberry Biscuits
Turn your favourite cereal into a delicious lunch box filler! These crunchy, chewy biscuits are the perfect excuse to eat breakfast at any time of the day. We used cranberries and Cheerios in this recipe - but don't be afraid to get creative and make this recipe your own!
Ingredients
- 50g coconut oil
- 75g brown sugar
- 1 Tbsp golden syrup
- ½ tsp vanilla extract
- ¼ tsp baking soda
- 3 Tbsp EasiYo Greek Style Unsweetened Yogurt
- ⅓ cup plain flour
- ⅓ cup rolled oats
- ⅓ cup dried cranberries
- 2 ¾ cups Cheerios
Method
- Preheat the oven to 160°C.
- Combine coconut oil, brown sugar and golden syrup in a medium sized saucepan. Place on a low heat and stir until just melted. Take off the heat and add the baking soda, vanilla extract and yogurt and stir until combined.
- Add the flour, oats, cranberries and Cheerios and stir until well coated.
- Line 2 baking trays with baking paper. Spoon biscuits onto the trays.
- Bake for 10-14 minutes until golden.
- Remove the biscuits from the oven and slide them off the tray and allow to cool on the baking paper. Store in an airtight container.
