Crispy Chicken Burgers with Easy Coleslaw
Makes 4
Chicken burgers
- 4 chicken thighs, skinless boneless
- ⅓ cup EasiYo Greek Style Unsweetened Yogurt
- ¼ cup flour
- 2 Tbsp fresh oregano, chopped
- 1 tsp smoked paprika
- 1 tsp cayenne pepper
- 1 tsp salt
- 4 seeded buns to serve
- Tomato relish or red pepper pesto to serve
Slaw
- ¼ green cabbage, finely sliced
- 4 spring onions, thinly sliced
- 4 Tbsp parsley, chopped

⅓ cup EasiYo Greek Style Unsweetened Yogurt
- 2 Tbsp mayonnaise
- Juice of ½ lemon
- ½ tsp Dijon mustard
- Salt and pepper
Method
- In a large bowl, toss chicken in yogurt. Cover and chill for at least 1 hour to marinate.
- Place flour, oregano, spices and salt in a shallow bowl, mix well and dip each piece of marinated chicken into the flour mix until evenly coated.
- Heat a large nonstick pan on medium heat with a bit of oil and cook chicken for about 6-8 minutes each side, or until cooked through. Allow chicken to rest while you make the slaw.
- In a large bowl, toss together cabbage, spring onions and parsley.
- Combine yogurt, mayonnaise, lemon juice, and mustard together and season with salt and pepper to taste. Mix slaw and dressing together until well combined.
- To prepare burgers, slice buns in half, layer chicken with slaw on top and add a dollop of your favourite relish or pesto to serve.
